Coconut sugar is a natural, unprocessed sweetener derived from coconut flowers. Unlike other sugar products that are grown as plants only, coconut trees grow in the wild and benefit the ecosystem. According to the Food and Agriculture Organization of the United Nations, coconut sugar is one of the most sustainable sweeteners in the world, producing up to 75 percent more sugar per acre than cane sugar.
It is considered to be one of the healthiest forms of sweeteners, as it has a naturally low glycemic index (GI). When carbohydrates (starch and sugar) are eaten they are converted into glucose and pumped into the bloodstream.
Low glycemic index releases glucose more slowly and steadily, and is therefore better absorbed by the body to control blood sugar levels. Coconut sugar is rated GI 35.
In comparison, most products made from cane sugar have a GI of around 68. This fact makes coconut sugar a preferable choice for diabetics who need to follow a low-glycemic diet.
Cancer, obesity and cardiovascular disease are linked to excessive consumption of refined and high-glycemic carbohydrates. Coconut sugar does not carry the same risks of these diseases and thus offers a natural, nutritious alternative to cane sugar and artificial sweeteners.

Similarly, coconut sugar contains 10, 300 ppm of potassium (related to controlled sugar and cholesterol levels) and 790 ppm of phosphorus (vital for cell growth, bone development and kidney function).
White sugar contains only 25ppm and 0.7ppm respectively.
