Matcha means powdered tea.
It contains 135 times more antioxidants than a simple green tea and this is because we consume the whole tea leaf and not just the infusion. Unlike green tea, in matcha tea the leaves of the plant, before harvesting, are shaded and this change in sunlight raises the levels of chlorophyll which is rich in nutrients. Once harvested, the leaves are steamed to stop fermentation that would reduce these elements. After drying, they are ground with stones and give us a bright green powder.
Matcha tea is high quality tea, rich in vitamins, minerals, antioxidants that protect against heart disease and forms of cancer, better regulate blood sugar, lower blood pressure and have anti-aging properties. In addition to polyphenols (antioxidants) it has been shown to boost metabolism and slow or stop the growth of cancer cells.
Matcha tea has a strong taste, looks like grass or spinach and has the property of relaxing and calming.

Matcha tea is a traditional Japanese tea made from the leaves of the Camellia sinensis green tea.
The process of making matcha is quite unique and requires attention to detail.
Some steps include:
Leaf Selection and Cultivation: Good matcha is produced from the young and tender tops of Camellia sinensis tea leaves. Before harvesting, the leaves are protected from the sun with a shade, creating more chlorophyll and growth.
Shading: A few weeks before harvest, the leaves are shaded to enhance chlorophyll production and reduce the production of tannins, which can make the tea bitter.
Harvesting: The leaves are harvested manually, removing only the young and fluffy leaves.
Grinding: The leaves are removed from the trunks and pounded into small pieces called "tencha".
Drying: Tencha is carefully dried without losing its color and flavor.
Grinding: Tencha is ground with special mills to produce matcha in powder form.
Refinement: Matcha undergoes strict quality controls and can undergo various refinement processes, such as stone removal or roasting.
Making the tea: To make matcha tea, you add a small amount of the powder to a deep mug, add hot water (about 70°C), and stir vigorously with a wooden or bamboo stirrer, known as a "chasen", until a creamy and foamy surface is created.
The end result is a rich and fragrant drink, known for its high content of antioxidants and nutrients.

Matcha tea can be consumed as a beverage either hot or cold.

instructions for use
1. Add 2 teaspoons of matcha powder (about 2g) to the bowl, after sifting them before.
2. Add about 20ml of warm water (70-80 °C) and mix with the Bamboo stirrer until you get a uniform paste without lumps.
3. Add another 80-100ml of hot water and whisk vigorously from side to side until there is a frothy layer on top. 

HOW TO MAKE HOT MATCHA LATTE
1. Make hot milk foam 180-250ml with vegetable milk (almond, soy, etc.)
2. Mix the foamed milk with the Matcha tea
3. Stir the mixture and optionally add sweetener or syrup (maple, agave, date, etc.)

1. Make cold foamed milk 180-250ml with vegetable milk (almond, soy, etc.)
2. Mix the foamed milk with the Matcha tea
3. Stir the mixture and add ice cubes.
