Peanut butter, a very popular product in America, in recent years is becoming increasingly popular in Greece. Despite its name it actually has nothing to do with butter.

It is essentially a ground pistachio pulp. It is an excellent ingredient for fast, healthy and delicious snacks and can be used in sweets, as a spread for bread or even in sauces in cooking.

In addition to great taste in sandwiches and sweets, peanut butter also has substances that are very beneficial to health, such as protein, good cholesterol and fiber.

According to Consumer Reports, peanut butter is one of the protein foods that contains about 2 grams of fiber per serving (2 tablespoons).

Fiber keeps the digestive system in good working order and can also lower total cholesterol thereby improving a person's cardiovascular health. It is also the best way to start your day, as it ranks among the foods that give us tremendous energy. Peanut butter also contains magnesium in an amount equal to 14% of the daily human intake (per 1 serving = two tablespoons). Magnesium is essential for glucose metabolism, which is associated with a lower risk of diabetes.

1. Peanut butter cookies stuffed with chocolate praline

Recipe: Akis Petretzikis

Ingredients for 12 servings

180 gr. butter, unsalted at room temperature and extra 4 tbsp.
110 gr. oat flakes
120 gr. flour g.o.x.
1 tbsp. baking soda
1 tbsp. salt
80 gr. soft black sugar
60 gr. granulated sugar
150 gr. peanut butter
chocolate hazelnut praline, for the filling

Put oil paste in a pan and set aside.
Melt 4 tbsp. butter in a medium skillet over medium heat. Add the oats and cook, stirring constantly until it turns brown for 5-10 minutes. Spread the mixture in the pan with the oil paste and leave to cool.
Preheat the oven to 180o C. Put oil glue in 2 pans.
In a medium bowl, beat together the flour, baking soda and salt and set aside. In the bowl of the mixer with the feather, mix to cream the rest of the butter, the brown and the granulated sugar. Add the peanut butter and stir until mixed.
Pour in the mixture with the oats and the mixture with the flour. Beat on low speed until mixed.
Put the dough in a piece of oil paste. Cover it with a second oil paste and start opening it with the rolling pin until it becomes 6 mm. Carefully transfer the dough to a baking sheet and refrigerate for at least 20 minutes.
Remove the oil paste from above and cut with a cutter into round cookies with a diameter of 5 cm. Place the cookies leaving a gap of 2.5 cm between them in the prepared pans with oil paste.
Sprinkle with sugar. Put in the oven and bake, changing their position, until they get a nice color. Bake for about 10 minutes.
When the cookies have cooled completely, fill them with a chocolate praline with a pastry bag and make them into sandwiches.

2. Peanut butter mousse

Ingredients for 4 servings

800 gr. cream cheese, low fat
150 gr. peanut butter, soft
50 gr. agave syrup
60 gr. cocoa
1 tbsp. vanilla extract
For serving

100 gr. whipped cream, vegetable
20 gr. peanuts, finely chopped

In the multi-machine with the knives, beat all the ingredients until you have a soft and smooth mixture.
Transfer the mixture to the refrigerator for 15-20 minutes to tighten the mousse.
Remove from the fridge and distribute in glasses.
Serve with vegetable whipped cream and chopped peanuts.

3. Cinnamon and peanut butter cookies

Ingredients for 12 servings

200 gr. Brown sugar
2 eggs
2 tbsp. cinnamon
1 pinch of salt
350 gr. peanut butter
1 tbsp. vanilla extract

Preheat the oven to 170 ° C in air.
In a bucket of the mixer with the wire, fluff the eggs and the sugar.
Add the cinnamon, salt and vanilla.
Remove from the mixer bucket and with the help of a fork homogenize the peanut butter with the rest of the mixture.
In a flat pan with oil paste, spread a spoon full of our mixture. Be careful to leave space between them because as they are cooked they will spread a little.
Bake for 15 minutes.
Leave to cool and serve.
