Coconut sugar is a natural, unprocessed sweetener derived from coconut flowers. Unlike other sugar products grown as plants only, coconut trees grow in the wild and benefit the ecosystem. According to the Food and Agriculture Organization of the United Nations, coconut sugar is one of the most sustainable sweeteners in the world, producing up to 75 percent more sugar per acre than cane sugar.
It is considered to be one of the healthiest forms of sweeteners, as it naturally has a low glycemic index (GI). When carbohydrates are eaten (starch and sugar) they are converted to glucose and pumped into the bloodstream. The low glycemic index releases glucose more slowly and steadily, and is therefore better assimilated by the body to control blood sugar levels. Coconut sugar is rated GI 35.
By comparison, most products made from cane sugar have a GI of about 68. This makes coconut sugar a preferred choice for diabetics who need to follow a low glycemic diet. Cancer, obesity and cardiovascular disease are associated with excessive consumption of refined and high glycemic carbohydrates. Coconut sugar does not carry the same risks of these diseases and thus offers a natural, nutritious alternative to cane sugar and artificial sweeteners. In addition, the gradual and controlled release of energy levels between meals also helps maintain a healthy weight.
With a plethora of vitamins and 16 amino acids, coconut sugar has a much richer nutritional value than any other commercially available sweetener. Glutamine is the predominant amino acid in coconut sugar and is known to boost the immune system and promote tissue repair. It has also been found to reduce healing time for those recovering from injury, surgery, trauma and strenuous exercise. Coconut sugar also contains 12 of the essential vitamin B complexes, and has a high content of inositol which is essential for healthy nervous and cognitive function. Inositol is also able to help fight depression.
Among the many nutrients contained in coconut sugar is nitrogen, important for maintaining a healthy heart. Data released by the Philippine Ministry of Food and Nutrition Research Institute shows that coconut sugar contains 2020 ppm nitrogen compared to its 100 ppm brown sugar. Refined white sugar does not contain nitrogen at all. Similarly, coconut sugar contains 10,300 ppm potassium (associated with controlled sugar and cholesterol levels) and 790 ppm phosphorus (vital for cell growth, bone growth and kidney function).
White sugar contains only 25ppm and 0.7ppm respectively.
