Quinoa is a shrub whose seeds are eaten and come in many colors: white, red, black and blue
Red and golden quinoa are nutritionally the same. Red makes for a very beautiful look.
Quinoa was of great nutritional importance to pre-Columbian Andean civilizations. It was the second main food after the potato and was followed by the corn.
Today it is highly valued for its nutritional value and the United Nations has classified it as a superfood for its high protein content (13%).
Unlike rice or wheat, which are low in lysine, quinoa contains a balanced content of essential amino acids for humans, making it an unusually complete diet.
This means that we need less quinoa protein than wheat protein for our needs. Although in practice it is a seed, quinoa is considered a complete cereal and a good source of fiber.
Quinoa also contains Omega 3 fats, which do not harm the heart. It is also a good source of phosphorus and has a lot of magnesium and iron.

Stuffed with tricolor quinoa
Materials
350 gr. boiled quinoa tricolor
4 colorful Peppers
2 Sprigs of Leeks
2 sun-dried tomatoes
1 cup sweet Paprika
1/2 cup Pine
Salt Pepper
Implementation
Boil 350g of quinoa in 700ml of water for 15 minutes.
Remove from the heat and after it cools for 1-2 minutes, cover it with a cotton towel and let it swell.
Preheat the oven to 200 c.
Soak the sun-dried tomatoes in water to soften them.
Cut the peppers in half lengthwise and remove the seeds.
Set aside the halves (to be filled later) and finely chop the rest.
Wash the leeks well and chop them finely.
Cut the sun-dried tomatoes into small pieces.
Heat the olive oil in a pan and sauté the chopped leeks, peppers and sun-dried tomatoes for 3 minutes, until soft.
Mix the sauteed vegetables in a bowl for the filling together with the quinoa.
Place the 4 halves of peppers in a pan.
Spoon the peppers with the stuffing we prepared.
Bake in the oven for 10-15 ', until it gets a color filling and the stuffed with quinoa quinoa is ready to be served
