Hazelnuts are a nutritional treasure as they are rich in nutrients. They are also rich in calories, so you need balance and moderation in their consumption.

Hazelnuts also contain good amounts of vitamin B6, folic acid, iron, phosphorus, potassium and zinc. In addition, it is a good source of omega-6 and omega-9 fatty acids, important components of cell membranes that help our body absorb other nutrients.

Hazelnuts and health benefits
Antioxidants
Hazelnuts contain significant amounts of antioxidants. Antioxidants are substances that protect our body from free radicals which lead to oxidative stress and can cause premature aging, cancer and heart disease. The most well-known antioxidants in hazelnuts are phenolic compounds, which have been shown to help lower blood cholesterol and inflammation. According to studies, phenolic compounds may be associated with a lower incidence of chronic degenerative diseases, such as cancer, diabetes, Alzheimer's disease and cardiovascular disease.

Most antioxidants are concentrated in the skin of hazelnuts. However, their antioxidant activity is significantly reduced during the baking process. Therefore, it is recommended that hazelnuts be eaten raw and peeled and not peeled, raw or cooked.

Cardiovascular health
Eating hazelnuts has been shown to protect the heart. Their high content of vitamin E, potassium, magnesium, dietary fiber, antioxidants and monounsaturated fatty acids, offers many health benefits. Research data suggest that eating hazelnuts can:

Hazelnuts are rich in manganese, a trace element with antioxidant properties that enhances the metabolism of amino acids, fats and carbohydrates. They also have a high concentration of copper which is necessary for healthy cardiovascular function and has a positive effect on blood pressure and cholesterol levels.

Anti-cancer action
The high concentration of hazelnuts in antioxidants, vitamins and minerals has potential anti-cancer benefits. Among other nuts, hazelnuts have the highest concentration of a class of antioxidants known as proanthocyanidins. Some studies have shown that proanthocyanidins can help prevent and treat certain cancers.

Vitamin E is a powerful antioxidant found in large amounts in hazelnuts and has potential therapeutic effects against certain types of cancer, including breast, prostate and colon cancers. Similarly, the manganese contained in hazelnuts has been shown to aid in the functions of specific enzymes that reduce oxidative damage and cancer risk. There are studies that have shown that hazelnut extract can be beneficial in the treatment of cancer of the cervix, liver, breast and vagina, as well as the colon. However, more research is needed.

Reduction of inflammation
Many studies have linked hazelnuts to reduced inflammatory markers, thanks to their high concentrations of good fats. The benefits of hazelnuts have been studied mainly in groups of people with high cholesterol, metabolic syndrome, overweight and obese people. However, it has been shown that consuming them can reduce the inflammatory response even in healthy people.

Blood sugar
Hazelnuts seem to help lower blood sugar levels. According to studies, their consumption has a positive effect on fasting insulin levels but also on insulin sensitivity. It seems that a diet rich in nuts, including hazelnuts, could help lower blood sugar and increase insulin sensitivity.

Weight control
The high fiber content of hazelnuts has many health benefits. Initially, it enhances the health of our digestive system and reduces constipation. Fiber also helps control weight, as it promotes satiety. It has been shown that people who follow a high-fiber diet are more likely to achieve weight loss.

Also, research has shown that fiber can reduce the risk of diabetes, heart disease and some cancers. Hazelnuts may be high in fat, especially monounsaturated fats, but this does not seem to cause weight gain as part of a balanced diet.

So, you can consume a small handful of hazelnuts 3-4 times a week as the Mediterranean Diet stipulates, either plain or in pieces in sweets, ice creams, salads or yogurt.

Hazelnut drink
Materials

300 g raw hazelnuts with their skin
1 liter of water
Implementation

Soak the hazelnuts in water for at least six hours.
Put the water and the hazelnuts in the multi and beat until they are mashed.
Place a clean kitchen towel in a deep bowl and empty the mixture.
Lift the edges of the towel and drain well until you get all the milk (the hazelnut residue left on the towel can be used in other recipes eg in hazelnut praline).
The hazelnut drink is ready and kept in the refrigerator for 4 days.
Hazelnut praline
Materials

1 cup raw hazelnuts
1/4 cup water
3 tbsp. cocoa
3 tbsp. honey
Implementation

Bake the hazelnuts in the air at 160o C for 15 minutes, until golden brown.
Peel the hazelnuts as much as possible and grind them in the multi for 10 minutes until they start to produce oil and we have a liquid mixture.
Add the cocoa, honey and water to the multi and beat again.
Our praline is ready!
Chocolates with hazelnuts
Materials

100 g hazelnuts
100 g couverture or chocolate with 70% cocoa
zest of 1 orange
Implementation

Melt the chocolate in a baking pan.
Add the orange zest and stir.
Add the hazelnuts and then make small rocks on oil paste.
Let cool and enjoy!
