They are thin-skinned - easy to boil (50 minutes boiling and 60 minutes crushing) with a special flavor due to the microclimate and soil composition of the Prespa region. They are cooked in soup (fasolada) or piaz.
The seed is of local origin and the cultivation is completely traditional. They have a high nutritional value completely in harmony with the philosophy of a healthy Mediterranean diet. They contain many nutrients and specifically offer our body proteins of good biological value without the presence of saturated fats.
They also have starch, B vitamins, magnesium, potassium and other minerals. Their fiber content contributes to improving intestinal motility and helps reduce cholesterol, since a part of it is carried away for excretion in the intestine.
