Studies have shown that the antioxidant behavior of raisins remains constant - and in some cases even increases - when cooking food.
It is a very good source of antioxidant polyphenolic ingredients. Polyphenols have antioxidant activity (protect LDL cholesterol from oxidation, reduce cholesterol deposited in tissues, reduce atherosclerotic plaque in blood vessels and thus the risk of heart disease).
It has antimicrobial and antibacterial activity as well as vasodilating action through the production of intracellular nitric oxide.
It contains large amounts of trace elements, namely magnesium, zinc and potassium (regulators of blood pressure).
Given that raisins are consumed with their skin, they have a very high percentage of dietary fiber - in fact, Corinthian has higher than other types of raisins and is higher than that of most fruits (only a few leafy vegetables are left). Dietary fiber acts as a substrate for beneficial bacteria in the colon, thus giving raisins prebiotic properties that help the proper functioning of the intestine but also inhibit the biosynthesis of cholesterol.
The sweetness of raisins is due to its high content of fructose, which has a very low glycemic index (19) compared to glucose (100) and as a result the raisin has a moderate glycemic index (55-63).
Raisin sugars are not in the form of crystals, so they can "trap" other ingredients, antioxidants, flavorings, and protect them. At the same time, the seeds, when present, also contribute to the antioxidant content.
