Greek grape petimezi
Biological product
Petimezi is the thick product that comes from the must of the grapes after cooking, without prior fermentation, which is a flavor with a rare taste and slightly roasted taste.
It is used in sweets during baking and also as a sweet coating for some foods, sweets or salads. It is used today throughout Greece and can be produced for home use, or for sale commercially under various brand names. There are light-colored and dark-colored syrups and these depend on the type of grape used, as well as the way we cook it (in pots in large quantities so it becomes dark or little by little in the pan, so it becomes light-colored).
Petimezi should not be confused with must. Must is the juice (must) produced when we squeeze the grapes, without boiling. Boiled must is also called cut must. Depending on the cooking time, petimezi is produced in different densities.
